TFD: Zucchini Fries!

Tuesday Food Day here on LMPC! Today I'm sharing a really easy recipe for zucchini fries! A great substitute for greasy oily fries that are no good for you!

What you need:

- 3 large zucchinis
- 1/2 cup flour
- 1 egg
- Panko crumbs
- Italian seasoning of your choice


Preheat oven to 415 degrees

Start by rinsing and drying off the zucchini then chopping up into fry like shapes.
Next: in a big ziplock baggie or bowl, coat the zucchini lightly with flour. Prepare panko crumbs in another bowl with italian seasoning of your choice. After coating with flour, whisk an egg in a large bowl and coat each piece completely one by one and coat with panko mix.

I suggest placing the coated fries on a wire cooling rack on top a baking sheet in the oven. This lets the zucchini get crispy on the bottom too!

Keep in oven for 15 minutes or until desired crispyness.
I served mine with red sauce on the side!
